What is the best way to cook paua?

Slice the paua finely across the foot as you would a mushroom, less than 5 mm thick. Place the slices in the marinade, mix around and leave in the fridge for a minimum of four hours for the flavours to work through. Saute quickly in a hot pan and serve immediately. Out of the pan or off the barbeque is best.

What does paua taste like?

What does it taste like? The flavour of paua is very distinct. It's oceanic and salty, but well balanced at the same time with a sweet and buttery palate. It's cooked texture is somewhere between a scallop and calamari so it benefits from longer cooking to make it tender or short bursts of heat to just cook it.

Can you eat paua raw?

Heat a little peanut oil in a wok until very hot. Sear the paua on both sides for about 3 minutes. Remove from the pan and rest for a few minutes before slicing thinly.
